Felicitations and the Festival of Lights

Fest of Lights brochure Only a week or so away from officially opening our newest location at VanDusen Botanical Garden, and we couldn’t be more excited. The timing is perfect – we’ll be opening our doors just in time for the Garden’s annual Festival of Lights, a breathtaking display that draws crowds from all over the city. Every year, what remains of Van Dusen’s renowned array of flora is bedecked with thousands of lights and ornaments to dazzle Christmas wassailers of every age. From waterfalls to rock gardens, VanDusen Garden is transformed into a veritable winter wonderland – and we’re proudly overlooking it all from our Visitor’s Centre vantage point (which, by the way, has magnificent spans of windows).

The Festival of Lights begins on December 9th, running every night (except Christmas) from 4:30pm to 9pm until January 2nd. Within the Gardens you’ll find the Gingerbread  Wood, the Golden Chain Walk, a giant Sparkling Spruce, and the Candy Cane Express model train that kids of every age adore. You’ll also have a chance to meet Santa in his Living Room, see the Dancing Lights on Livingstone Lake, dream in the Make-a-Wish Shrine, and jingle with Sven and Jens, the Scandinavian Christmas Elves. For traditional delights, Dr. Waffle will be serving up waffles of every flavour with real apple cider and Thomas Haas Hot Chocolate; Mrs. Claus will have hot dogs, smokies, freshly-popped kettle corn, apple-walnut turnovers, and chicken fingers aplenty; Whistler Wood-fired Pizza Company will be offering slices and entire pies from their on-site ovens; Mr. Ken will be frying up the good ol’ donuts he’s famous for; and of course, yours truly will have bistro favourites and hot drinks ready to impress. You won’t want to miss out on the many tastes of the holidays!

Feature Fancy: Cozy Oats

Oatmeal and Fruit Oatmeal Yellow Bowl

Don’t be fooled by this staple grain’s plain and unexciting reputation or its unremarkable place on the grocery shelf – hidden behind this dull guise is not only enormous health potential, but a warm, cozy wealth of flavour.  Consider it a simple, blank canvas awaiting your creative touch.

To start with, oatmeal is a fabulous combat weapon against cholesterol and related heart disease.  This is because it’s loaded with a specific type of fibre called beta-glucan, 3 grams of which can, when consumed on a daily basis, lower total cholesterol anywhere from 8 to 23 percent.  The same fibre can also boost the immune system by enhancing its response to infection.  All types of fibre also contribute to weightloss, as they slow digestion and prolong the feeling of fullness and satisfaction.  This process also stabilizes blood sugar levels, ensuring a steady source of energy over a longer period of time. Oats also contain a unique antioxidant compound called avenanthramides, which help prevent destruction in the digestive tract of healthy fats by free radicals.  Partnered with selenium (also abundant in oats) and vitamin E, it can also aid in DNA repair and boost the functions of vital antioxidant systems throughout the body.  Oats are also high in manganese, the essential trace mineral that is vital to bone production and maintenance. It is also needed in synthesizing thyroxin, the principal hormone of the thyroid gland.  Vegetarians especially appreciate the benefits of oatmeal because of its vitamin B1 (thiamine) content – without consuming meat, it can be difficult to obtain this essential vitamin. Combined with iron-rich oat bran, oats are an ideal protein and energy source.

Enough science – a bowl of oatmeal still looks rather plain and uninviting.  This is where creativity and innovation come in.  Dressing up a bowl of oatmeal can result in a complete breakfast, encompassing an array of vitamins, minerals, protein, and fibre in one delicious meal.  In fact, there is an entire blogging community devoted to oatmeal and its epicurean potential!  Try the oldBowl of Oatmeal with Fruit favourite: creamy oatmeal with warm milk, a sprinkle of cinnamon, raisins plumped by the heat and moisture, and a touch of brown sugar.  Or slice a banana into the mix and top with chopped pecans and honey.  Saute peaches with maple syrup until caramelized, and serve with oatmeal and vanilla yogurt.  For nut-lovers, stir a spoonful of a favourite nut butter into the hot oats until melted and sprinkle with granola.

Need inspiration?  Drop by our cafe around breakfast time, and grab a bowl of what we call Hull and Oats: a hot mug of oatmeal and Red River cereal served with fresh seasonal fruit, warm milk, and brown sugar.  Especially as winter’s cold touch lingers, a warm bowl of comfort is the best way to get the day started.  Satisfy your health and your taste buds in one go!

A Bit About Holli – Front-of-House Supervisor

HolliWinner of even the grumpiest of hearts, Holli is the warm, smiling personality that draws visitors back to the cafe for more than just a coffee and a muffin.  She’s a natural speaker, but confesses she still feels nervous with crowds and unfamiliar customers.  None of this nervousness is apparent, however, as we sit and chat about her place at Truffles.  She’s worked at the cafe inside the North Shore Film Studios for one year, running the counters, serving customers, and training new staff.  Occasionally she helps out at catering events as a server.  “That’s actually a big interest of mine,” she explains. “My favourite was a wedding we catered on Bowen Island in May.  I loved it, even though I was tripping over divots in the grass while I was serving the champagne!”  The cafe is her home within the company, however, and she happily asserts that it never gets old.  “We have lots of regulars, and I love them all,” she smiles.  “There’s always news to chat about.  Sometimes we even meet a few stars coming through the [film] sets.  It’s given me a real appreciation for the film industry.”  Indeed, the cafe itself has featured in the spotlight: “Once, they spent about ten hours transforming its inside for only half and hour of filming, which ended up as a two-minute clip,” Holli recalls.

Before Truffles, Holli worked in the little coffee bar at Whole Foods in West Vancouver for three years, during which she built many memorable relationships with regulars. After that, she worked a brief stint at Cafe Traffique, but found the atmosphere wasn’t nearly as friendly.  The social community is the most important part of the job for Holli, and she certainly found it at Truffles Cafe.  Her friendliness and warmth are irresistible, and her congeniality is almost always returned.  “My goal is to soften up the grumpies and get them to smile,” she says.  Her other goals include returning to school to study Health Sciences and First Nations, opening a drug and alcohol treatment facility for First Nations communities, and inspiring others with her own personal journey.

Over the next month, Holli will prepare to transfer to Truffles’ newest location – the Garden Cafe inside VanDusen’s brand new Living Building Visitor’s Centre.  The cafe is due to open in early December, and Holli will be the shining hostess, representing Truffles to a whole new clientele.  The usual Truffles bistro favourites will be available, in addition to the wide range of catering and event hosting options Truffles is known and celebrated for.  The gardens will offer some gorgeous settings for catered occasions, and rich opportunities for Truffles’ growth and expansion.  Maybe Holli will even get to serve at another wedding!
